Gluten-free and sugar-free cake
I learned this recipe while
trying to make a cake for my afternoon tea, but gluten-free.
A recipe with inexpensive
ingredients and very easy to make; let's see together:
Recipe :
Ingredients :
· 1 egg;
· 2 tablespoons of cottage cheese
(or Greek yogurt, or natural yogurt);
· 2 tablespoons of honey
(preferably natural);
· ½ cup grated coconut;
· Lemon zest;
· 1 pinch of salt;
· Raisins or chocolate chips.
Preparation:
· Turn on the oven to 180°;
· In a bowl – salad bowl put the ingredients – in
order – mixing well to obtain a homogeneous texture;
· Pour into a buttered mold;
· Sprinkle with raisins or chocolate chips;
· Cook for 20 minutes, keeping an eye on the
cooking, then turn on the oven broiler for a few minutes (no more than 3
minutes, in principle);
· Let it cool or even cool;
· Store in the refrigerator.
Once we get into the habit of
avoiding gluten, it will be difficult to eat it again; in fact, the feeling of
lightness after having "eaten healthily" encourages us - even more -
to avoid semolina or white flour, especially since the latter causes us more
and more gastric discomfort.
Certainly, semolina is richer –
in benefits – than white flour, but it is always recommended to consume it in
moderation, except for people with celiac disease; although, however, many are
following a “healthy” diet, to stay in good shape and have a beautiful figure.
Instead of raisins or chocolate
chips, you can frost the cake with chocolate – after baking, of course.
