Gluten-free meringue cake
I learned this recipe while trying to make a meringue cake for my family, but
gluten-free.
A really good cake made with inexpensive ingredients that you can make at home
; let's see together:
Recipe :
Ingredients: for a 20 centimeter diameter
mold
· 2 egg yolks
(the whites for later);
· 1 glass of
pitted dates;
· ¾ of a glass
of milk (or a pot of plain yogurt);
· ¼ glass of
black coffee (otherwise fill the previous glass with milk);
· ½ glass of
oil;
· 1 glass of
almond powder (or peanut, walnut or coconut) and for each you will have a
different taste;
· 1 packet of
baking powder;
· Lemon or
orange zest;
· 1 pinch of
salt;
· Vanilla;
· Chocolate
chips.
For the meringue:
· 2 egg whites
(at room temperature);
· 100 grams of
sugar
· 1 pinch of
vanilla.
Preparation:
· Turn the oven
on to 180°;
· In a blender,
put the first five ingredients – in order –: blend well to obtain a homogeneous
texture;
· Add – please
– the powder, the yeast then the flavoring: remix;
· Pour into the
greased or baking paper-lined mold;
· Sprinkle with
chocolate chips;
· Cook for 20
minutes, while monitoring the cooking process;
· Let it cool down

Preparing the meringue :
· In a salad
bowl (or in the mixing bowl) put the egg whites;
· Start
beating, gradually adding the sugar mixed with vanilla, until you obtain a firm
meringue;
· Spread over
the lukewarm cake;
· Brown the
meringue using a kitchen torch or in the oven (under the broiler);
· Remove from
the oven;
· Serve –
preferably – cold.
After browning
the meringue, you can decorate it with zigzags of melted chocolate, or sprinkle
it with slivered almonds.
It is perfectly possible to replace the meringue with whipped
cream ; or with a chocolate glaze. You can also simply coat it with jam.
And there you
have it, a very presentable cake, to present to family, for guests or for a
birthday party.
