Watermelon skin jam & Melon skin jam

 Watermelon skin jam & Melon skin jam


I learned these two recipes from my grandmother, as well as from a cookbook; a brilliant idea which results in two delicious jams made from fruit skins, namely those of watermelon and melon.   

Watermelon Skin Jam:

Ø  Ingredients :

·     1 kg of watermelon skin;

·     800g of sugar;

·     1 quarter of lemon;

·     1 teaspoon of vanilla.

Ø  Preparation :

1.     Rinse then cut the watermelon skin into cubes;

2.     Take the amount of 1 kg;

3.     Put this weighed quantity in a bowl-salad bowl;

4.     Add the sugar on top;

5.     Cover and let stand overnight;

6.     Put the above mixture in a pot - preferably - copper;

7.     Incorporate the quarter of lemon as well as the vanilla;

8.     Put on medium heat, and cook for 25 to 30 minutes, stirring occasionally.

9.     Pour into glass jars, close the jar, then place it upside down: let - completely - cool;

Keep in a cupboard until opening the jar, to cool it.    

Melon skin jam :

Ø  Ingredients :

·     1 kg of melon skin;

·     750g of sugar;

·     ½ teaspoon of cinnamon;

·     ½ teaspoon glass of orange blossom water (which you can replace with a quarter of a lemon).

Ø  Preparation :

1.     Rinse the melon skin;

2.     Cut it into cubes after removing the yellow rind;

3.  Take the amount of 1 kg;

4.     Put this weighed quantity in a bowl with the cinnamon;

5.     Add the sugar and orange blossom water on top;

6.     Cover and let stand overnight;

7.     Put the above mixture in a copper pot - preferably - (use a Maryse spatula to bring everything down);

8.     Put on medium heat, and cook for 30 minutes, stirring occasionally.

9.     Pour into glass jars; close the jar - as for the previous recipe - then place it upside down: let - completely - cool;

Store in a dry place until opening the jar, to keep it cool.

Thus, after tasting watermelon and / or melon, the skin of these two fruits will be exploited and recycled, to have two succulent jams to savor… And enjoy your meal.
