Cookies for diabetics and cancer patients



I learned that healthy eating is not to eat foods that are too fatty, too sweet or too salty. 

Nothing prevents you from having a good meal on the table while eating hygienically, and the following two recipes are - not only - without white sugar, but also without white flour; and people with diabetes or cancer, are subject to a very strict diet, namely, at least white sugar, white flour, fat, or salt, let's see what follows:   

Whole Wheat Flour and Wheat Bran Biscuits:



Recipe :

Ø  Ingredients :

·     2 eggs ;

·     ½ glass of olive oil: 50ml;

·     200g of pitted and mixed dates (or date paste);

·     ¼ teaspoon of anise seeds;

·     ¼ teaspoon of fennel seeds;

·     ¼ teaspoon of cinnamon;

·     2 tablespoons of roasted and crushed almonds (or grated coconut);

·     1 teaspoon of baking powder;

·     Whole wheat flour for scooping;

·     Wheat bran for coating.

Ø  Preperation :

1.     Turn on the oven at 180 °;

2.     In a bowl-salad bowl or in the bowl of the kneader, put the eggs, olive oil and the date paste: mix by hand or with the “sheet” of the kneader;

3.     Add the seeds, cinnamon, almonds and yeast: mix again;

4.     Gradually incorporate the flour to have a nice dough;

5.     Form balls which you coat in the "wheat bran" and which you place in a floured tray (or lined with baking paper);

6.     Bake for about twenty minutes (maximum).  

Oatmeal Banana Cookies:


Recipe :

Ø  Ingredients :

·     3 small, ripe bananas (or 2 large);

·     1 egg ;

·     2 tablespoons of honey;

·     Vanilla or lemon zest;

·     2 tablespoons of olive oil;

·     50g of chocolate chips (or crushed almonds, raisins, peanuts ...)

·     3 and ½ to 4 glasses of oatmeal.

 

Ø  Preperation :

1.     Turn on the oven at 180 °;

2.     In a bowl, mash the bananas to mash them;

3.     Add the egg then mix;

4.     Add the honey, the aroma, the olive oil then the chocolate chips: mix;

5.     Stir in the oatmeal until you get a homogeneous texture;

6.     Form balls that you place in a tray lined with baking paper;

7.     Using your index and middle fingers, flatten the balls slightly (as if to make cookies);

8.     Bake for 10 minutes.  

So here are two recipes for economical and nutritious dry cakes… And enjoy your meal.
