Chicken Quiches

Chicken Quiches

I learned this recipe from my sister-in-law « Mounia »; a good recipe for a delicious quiche, which I chose - this time - to make in "miniatures".

Quiche is a savory pie, consisting mainly of shortcrust pastry, as a base, and its filling is - original - composed of fresh cream, but in culinary art, everything is happily allowed, and the quiche is revisited - on our tables as well as for our picnics - often present.  

As for this recipe, the dough is without butter, and the filling is without fresh cream…

Recipe:

Ø  Ingredients:

    Dough  :

·     1 glass (150 ml) of milk;

·     1 glass of oil;

·     1 egg ;

·     1 teaspoon of salt;

·  1 teaspoon of mustard: which you can replace with a pinch of thyme;

·     Flour to collect

o    Garnish :

·     Chicken breast: or leftover cooked chicken;

·     An onion ;

·     A carrot ;

·     A tomato;

·     3 portions of cheese (about 40 grams);

·     Cheese grated for the end (cheddar or parmesan…)

 

Ø  Preparation:

1.     Mix, in order, the ingredients for the dough: cover with cling film and let rest in the fridge, while waiting for the filling;

2.     In a pot (or skillet), brown the diced chicken breast, onion and grated carrot: if you have leftover cooked chicken , you can crumble it and add it at the end of cooking this garnish  ;

3.     Add the grated or diced tomato: cook over low heat;

4.     Finish with the cheese portions; turn off the heat: you must have a non-"juicy" mixture.


5.     On a floured work surface, roll out the dough; cut circles that you darken in individual floured molds: or a single pie pan ( if you have the rest of the dough, you can well wrap it in cling film and keep it in the freezer );



6.     To prevent the dough from falling off the edges of the molds during cooking, first leave it in the refrigerator for - minimum 30 minutes - before baking;

7.     Garnish the bottom of the molds, then put in an oven preheated to 180 ° for 30 to 35 minutes: watch the cooking;

8.     Before removing them from the oven, sprinkle with grated cheese;

9.     Close the oven just until the cheese is melted.     

And there you have it, chicken quiches, which can be served warm (or even cold), with a salad and / or soup, and which are also very practical to take on a picnic…
