Maghreb donuts: “Sfenj” (easy recipe)

I learned to make “Sfenj” from a youtuber (Samira dz kitchen); me who never dared to prepare these “doughnuts” because of the “difficulty” of their traditional recipe.

For those who have a kneader, the stain will be less difficult, but by following this recipe, no need to knead and the result is – just – extraordinary. The ideal is to start these stages of happiness , let's see together:   

Recipe:

Ingredients:

·        1 tablespoon of sugar;

·        1 tablespoon of brewer's yeast;

·        385ml lukewarm water;

·        500g of flour;

·        1 egg (small);

·        1 teaspoon of salt;

·        1 pinch of vanilla;

·        1 teaspoon of baking powder.

Preparation:

·     In a salad bowl, put the sugar, the brewer's yeast and 1 glass (220 ml) of lukewarm water: mix with a manual whisk;

·     Add a glass of flour (take 500g): mix well, still with a whisk, then cover with cling film: let rise for 10 minutes.

·     The "Levin" would have doubled in volume, and on it, bubbles are visible: degas with the whisk;



·     Add the egg (if the latter is "large", use only its yolk): whisk;

·     Incorporate the remaining flour, salt, vanilla and baking powder: mix with a “Maryse” spatula;

·     Now, with your hand, pick up the dough by adding – little by little – the remaining amount of water: cover this sticky dough;

·     Leave to rise for 30 minutes: wet your hand and degas the dough: cover again;

·     Repeat this last step up to 4 times;

·     Oil your hands and degas the dough for the last time: take it all off the sides of the salad bowl;

·     Oiled hand, with thumb and forefinger “pinch” the dough to form balls: arrange the latter, spaced out, in an oiled tray;



·     Cover the tray, and let these “balls” rest for half an hour;

·     Prepare two pans: the first with a small amount of oil (about 7 tablespoons) over medium heat, and the second with a “good” mass over almost high heat;

·     Follow the video below, for the next step:



·     Drain your “  Sfenj  ”.  

The "Sfenj" or "Sfendj" are donuts known in North Africa, made of flour or semolina, made from long kneaded leavened dough, to arrive at a sponge-like appearance when cooked.

These donuts come – traditionally – with a good hot tea … And enjoy your meal.
